# How to Prepare:

01 - Arrange 8 clear cups with 6 to 8 ounce capacity for layering.
02 - Dissolve red gelatin in 1 cup boiling water, then add 1/2 cup cold water. Divide evenly between cups, about 2 tablespoons per cup. Position cups at a slight angle using a muffin tin and refrigerate for 45 to 60 minutes until completely set.
03 - Sprinkle unflavored gelatin over 1/2 cup cold water and allow to bloom for 5 minutes. Add 1/2 cup boiling water and stir until fully dissolved. Stir in sweetened condensed milk and cool to room temperature.
04 - Once red layer is set, carefully pour white layer on top, approximately 2 tablespoons per cup. Return cups to upright position and refrigerate for 45 to 60 minutes until firmly set.
05 - Dissolve blue gelatin in 1 cup boiling water, then add 1/2 cup cold water. Cool to room temperature.
06 - Once white layer is firm, gently pour blue gelatin over the white layer, about 2 tablespoons per cup. Refrigerate upright for at least 2 hours until fully set.
07 - Top each cup with whipped cream and fresh berries immediately before serving.

# Expert Advice:

01 -
  • They look impressive enough to earn compliments, but honest truth is they're easier than any actual dessert you've made.
  • Once you nail the waiting game between layers, you'll find yourself making these for every summer gathering because guests genuinely light up.
02 -
  • Patience between layers is non-negotiable; rushing this by even fifteen minutes means your beautiful stripes will smudge into a muddy swirl that tastes fine but looks sad.
  • The temperature of each layer when you pour it matters as much as the ingredients themselves—too warm and it melts the layer below, too cold and it doesn't settle smoothly.
03 -
  • If a layer looks like it's setting too slowly, your refrigerator might be slightly warm—move the cups to the back where it's coldest, not the door where temperature fluctuates.
  • The unflavored gelatin in the white layer can be swapped for cornstarch if you're in a bind, though the texture becomes slightly less creamy and more gel-like.
